Pumpkin Pie Recipe
1 cup sugar (1/2 brown, 1/2 white)
1/2 tsp salt
1 1/2 tsp ginger
1/2 tsp mace or nutmeg
1/2 tsp allspice
2 eggs, beaten
1 can pumpkin or....2 cups fresh pumpkin
1 2/3 cup evaporated milk (or part evaporated and part half & half)
Combine dry ingredients, add pumpkin, eggs, milk and mix.
Pour into pie shell and bake 425 for 15 minutes. Lower heat to
350 for 35 minutes or until knife comes out fairly dry. You may
have to cover edges of crust with foil mid-way, so they don't get
too dark.
For Fresh Pumpkin:
Use small pie pumpkins, cut in half, remove seeds.
Place cut side down in pan with about an inch of water.
Bake at 350 until tender. Cool, scoop out fresh and mash
or process in blender or food processor.
